Well, haven't posted in forever, and I'm probably waaaay too late for this one...but if all other ideas don't work out, I still like the "name" angle:
1) BeatNIK Entertainment- works well because of the music=beat factor...But kinda encourages people to attack you if you're working karaoke at a rough-and-tumble place .
2) NIKerbockers (or NIKIbockers) Entertainment- Don't why I thought of that, but it just came into my head. Ladies in knickers potential?

get the customers in volved, maybe do a contest givaway for the best creator in the club? let them help come up with a good business name....
