OK I'm a little confused
You want to do this to keep from running cables yet you have to run cat 5 cables instead of coax so uh whats the difference

The VideoEase S-Video Balun allows one (1) S-Video channel to be connected via two (2) unshielded twisted pairs. Used in pairs, the S-Video Balun is used in home or commercial applications as a smart, fast and cost-effective means of connecting S-Video equipment using twisted pair instead of coax cable.
Also coax is stronger and if the ends get pulled off much easier to replace than cat 5. I also believe that you would get a better signal quality than cat 5.
