The young do drink the most booze but they drink at home to save money. Blue haired people go to bars in the morning or afternoon. Most of the 30-50s have careers and/or kids and need to be in bed by 11:00. If you want to get rid of the old guys that may remain just do some rap or hip-hop and they'll be out the door like the place is on fire.

I have never had trouble pulling in an early crowd - and we did a 9:30 to 1:30 show for four years. Demographics at my shows right now: Youngest (on adult night) 18 years old, oldest 83. People LOVE the elderly couple who come and sing (and dance whenever the right music is sung.) She is 78, he is 83. Of course they act far younger than their ages would indicate. However, they sing old country and everybody applauds like crazy for them. Not so sure a room full of them would work, but they always buy something and they always tip.

I will occasionally do "two-fers" - two songs in a row at the beginning of the night but only if the rotation goes up to 6 or 7 and stops. Lately it will continue to build up to 18 or 20 by the time I get through it the first time.

Half-price appetizers will work to bring in people earlier than normal, but if people don't get off work until a certain time, and they are the majority of your crowd, not sure what to suggest. That is the danger of putting all your eggs in one demographic basket.
