Actually I have seen 2 laptops running at the same time with 2 people running them.

Still makes no difference, even if they were both up & running karaoke, they were at the same show! Not multirigged making money in two different locations at the same time.

I also run two computers at my show, one has my karaoke program, the other runs my dj program, web access for song search/availability & rotation program.

It's the same show, it's not being run and making money in two different locations. They are at one show!
You do realize that most of the manus out there no longer have a problem with computer ran shows do you - as long as the user has the corresponding set of discs for the computer being used at the time. Even if someone had two laptops at the same show, only one is being used at any given time - no point to run both. A set of discs needs to be owned for each computer being used in different shows.
Sound Choice even recommends & endorses PCKJ for commercially ran karaoke shows. Pop Hits Monthly sells their monthlies in an mp3g format disc to be loaded & used on computers for commercial shows now as well. Both of these companies were addiment about computer karaoke, now they are both accepting it & endorsing the use of them, as long as original discs are owned.

Sound Choice has pirated their own material.

I run 2 pc's at my residency..One with the Karaoke prog, one for music.......(I hard wired em....not my equipment..the Pub Owners) .....sounds much better being able to gently fade between Filler music and karaoke...if it gets mega busy I can easily put on a "megamix" so I'm not having to cue up songs on the music PC....

On another note I am treated like one of the Family at my Karaoke residency,,...noone could take it away from me..undercutting me or not!!........Now the Dj'ing gig I recently picked up at another pub is a different mattter,,I work that from day to day....

As long as the club you are working pays the publishing fees ie ASCAP/BMi etc, doesn't mean it's illeagel to play those songs! All it means is the manu didn't have the rights to make it. Anyone that bought it legally through legal sources are fine playing the music in a licsenced establishment!
