How does one compliment a singer without sounding all fluffy?  To me, everyone who sub's is really terrific...no matter where a person is musically, if that person has a heart for music and is trying...then they should be encouraged.

It's way too easy to destroy someone with harsh wording...yet, some of us could us a little coaching with the idea of getting better...

Does anyone know what I'm talking about?

I know what you are talking about but dont know the solution. If someone asks for critique then you should be able to try and help them. The problem some may take it the wrong way even though they have ask for it. I think i could give my honest opinion but most of the time dont because very few sub a song under C. Then it would only be my opinion because I am no expert.

Tasteful coaching requires both the individual being coached, and the coach to realize few are "really terrific" in any artistic genre in terms of their skill level. Coaching SHOULD ALWAYS encourage, however it is requisite that all parties involved are receptive to it. Otherwise, what is wrong with leaving a neutral but positive comment such as-
"Enjoyed my listen"

Personally, I would never wish to encourage a person (asking and wishing for honesty), to continue making mistakes that impede them from improving, IMHO that is very distasteful treatment of a person that requires the ears of the more skilled, or just the objective listener.

encouragement does not require "coaching" unless a person assumes the roll of a coach meaning a singer is looking to be coached
