Very clueless here. Just wondering what should the settings for fx/high/mid/low, etc be on a channel that is not being used. Do you set it to zero (around 7 o'clock)?

Doesn't really matter if the channel isn't being used. I will usually zero any channel out that isn't in use, but again, doesn't matter.

Thanks! I didn't think it mattered since not being used.......is not being used. LOL! I'd rather ask a silly question instead of not and then mess up something!

I turn the Trim/Gain down, because those being all the way up can introduce noise even though nothing is connected.

Agreed, and if you mixer is equipped with a mute or on/off button on each channel, always a good idea to turn it off or engage the mute too.
