Based on my observations around here, the most sought after are:
1. the free ones
2. the ones they won't be sued for using
3. the new releases that haven't been or won't be produced

Since they are no longer sought after in my area, I would have to base my answer on what is most used at work.
The two most used discs are SC2269 (Journey) and SC8119 (Duets). A third disc- SC3459- is used often, but only because of a single track ( Before He Cheats ). No other songs on that disc are ever requested.
If one were to define "most sought after" by general consensus, based on what I read on the different forums. In that case it would seem that SC8125 (Eagles) is the one most searched for.

I saw a special edition, or some kind of #3000 one, used no case, go for a nice chunk of change on ebay a couple of months ago. I can't remember the exact name, and I think it went for $300 or more.
Also saw a funny Christmas one go for almost 60 bucks, right before Christmas. Sorry I can't remember that manu number either.
