I went to a restaurant recently that had gumbo on the menu but it was a soup and although it was nice I didnt think I was tasting the real thing...am I correct?

There is that distinct chance.

In my experience, the further you are from the source, the more like the taste will change.

I only have one recipe for gumbo that I use as an outline to make it the way that suits my needs at the time. gahmc might be more help with the recipes.

Wow, I didn't know I'd need a cookbook on here LMAO  Actually, when I make my gumbo, I just kind of throw in whatever I'm in the mood for at the time. But I'm looking for a basic recipe for you that I hope will contain ingredients you'll have available there. I'll private message you with it when I find it.

Do you ever make it without file?

I'll bet you can order that online. I believe file only comes from one spot in the US. I hope I'm wrong.

I have to admit, I rarely make my gumbo from scratch anymore   I now use either a pre-packaged roux with the seasonings already mix in, or grab a box of Zatarains, and just throw my meat in, but there is a way to make your roux with flour and oil ( butter or whatever), and that's the kind of recipe I'm looking for for MorganLeFey.

When I lived in Boston, I did order filet and such on-line LOL

We could just send her the Zatarains.  I love their Jambalya mix!!!  I wonder how hard it would be to get something like that through customs??

I attempted to make jabalaya once and although I liked the taste it was very gluggy...maybe I cooked the rice incorrectly or used the wrong rice I dunno..to be honest I burn water since I started cooking with gas. With electric hob I could turn it on and pop over to the puter for 15 mins...now I have a hole in the bottom of the pot if I do that :D

Hey!  I happen to like okra dang it!!  LOL

I find the unique texture very appealing(yes it does feel slimy...pmsl) and it tastes yummy too...never had it in gumbo but breaded in corn meal and fried to a golden brown with a little salt and pepper to taste...heck yeah!!  :yum:

Ok, OK!....I'm back!....For part of today at least..........Now I gotta go read all the above replies and the 5 PM's stacked up in my inbox...............

AAAARRRRRRGGGGGGHHHHH!!!!!!....I've got out an of town guest who is driving me nuts, we had a chemical spill at work, and we had a major equipment failure, my mom is getting an operation and will be in a rest home for a week or so then hopefully back home............I have been up to my ears!!!!!!!!!!!

I've got some stuff to put together and ship out to all who supplied their shipping addys.......I promise to get it done as soon as possible.....

My visiting cuz took off to Texas with my Silverado without my knowing.....He finally showed back up with my truck............Said he didn't think I would mind.........Guy flies down for two weeks so I toss him my keys and tell him to use it if he needs it, and he decides to disappear for a few days out of state.....!...DUH!

No good deed goes unpunished as they say.

..................Anyway, let me go read all that has been happening here and answer my PM's.

Anyone I missed?

Let me go check the laptop and see cause I think a few came in there........Some of your addys came in via email and some came in PM...I've started a Word Pad list that I am pasting them into to save for next time I ship nice little thangs.

Steven, knightshow and EBEN need to supply shipping addy...I had Steven's and knoghtshows, but I deleted them when cleaning up email folders, and I ain't a very organized person to start with, so you guys please resubmit addys.

Keith-

Take a deep breath, set your priorities, we can wait. Start sticking brooms, or pitchforks in the out-of-town guests hands :D , (if they can take off for a few days, they can help you out!)

Your Mom is in my prayers.

Above all, take care of yourself.
