Yes, the mixer would get rid of the need for the laser disk player.  Most of those, by the way, have a CDG function -- at least the PIoneer units I am familiar with. So if you have CDGs, you should be able to play them.
If you are looking at going digital, then any PC with a sound card should be able  to plug into a little mixer.
You could get a Behringer 1002FX mixer, a cable, and a mic for about $120 new and be up and running without need for the laserdisc player.
