actually i was thinking more along the lines of recipes and dishes. y'know like philly is known for cheese steaks, chicago has great pizza. except i'm thinking more eccentric. things not everyone would know about.

Well, pretty much everybody knows about 'em, but for me, it's a toss-up between Mexican (being the California boy that I WAS, Tex-Mex was something new when I got here, but I've loved Mexican forever) and barbecue.
I thought I knew what barbecue was until I came here!!

And for Crystal out in Alta, here we have egg rolls with real meat in them, not bean sprouts like they have out west (yuck).

Toss up for me, living in Iowa....
Iowa cut pork chop on the grill (it's about 2" thick or more, tender and juicy)
or
Iowa corn fed T-BONE steak (yes it make a hell of a difference if the cow is corn fed or been grazed)
mmmmmmmm.....meat!
